Day 1: Silver Service
- Russian, French & Plate service
- Proper table setting
- Table manners
- Formal meal service
- Buffet service
- Wine decanting & serving

- Typical breakfast set-up
Day 2: Interior Detailing / Laundry / Valet Services
- Interior detailing (cleaning i.e. marble, china, gold leaf, silver, delicate fabrics, drapes etc)
- Cleaning supplies to use; to avoid
- Scheduling: Chief Steward / ess vs. Steward/ess
- Guest prep / cleaning after guests leave
- Valet services
- Linen & wardrobe care, laundry & dry cleaning
- Tray services (afternoon tea service)
Day 3: Other Services, Flowers & Bartending
- Intro to Flowers
- Wine & Cheeses
- Champagne & Caviar
- Mixology – Basic

For certification, prerequisites are:
- Completion of the STCW95
- AYI 5 or 3-day Professional Yacht Crew Course
- Test score of 90% or above, including a place setting
- 1 year working aboard a yacht
